#hiloskyeveryday 2014 Week 5

Today is January 30th...which means that I am 30 days (or 1 month) into my picture a day resolution for 2014!  Yay Me!

Here's Week #5 

 Day 24 - My sweet Lacie Jane feeding her bitty baby "Molly" a nice big bowl of strawberries and kiwis!  She's such a good little Mama! 


Day 25 - Flipping through the Victoria's Secret Catalog that came in that day's mail and I happen upon this quote...and oh my is it the truth!  It's a Lacie World! 


Day 26 - Lacie's Post Bath Cheese!  She loves being wrapped in her towel like a "big girl."


Day 27 - This is the first thing I see when I walk in the girls' bedroom to wake them up!  Am I one lucky Mama or what?


 Day 28 - Time for a little yoga!  And yoga is just more relaxing on a PINK mat!  Namaste! 


 Day 29 - This is what happens after nap!  The girls want to be in the same crib so that they can chat about their sweet dreams!  Lacie had a dream about mermaids...which Blakely thought was very funny! 


Day 30 - Lacie's morning "cheese."  I love her all the time, but I especially like when she is a happy girl!  Maybe she's happy because it's payday?!?

Crockpot Buffalo Chicken

Crockpot meals are perfect any time of year, but I especially love to use my crockpot during the winter!  I found this recipe circulating on Pinterest about a year ago, and I knew immediately that it was something John and I would love!  It did not disappoint!  

Did I mention you make it in the crockpot with....

THREE INGREDIENTS! 

Here's What You Need for Crockpot Buffalo Chicken:
  • 1 pound boneless, skinless chicken breats
  • 1 bottle of hot sauce (I use Frank's Red Hot Buffalo Sauce - which I find is the best for making this recipe taste like Buffalo Chicken Wings)
  • I package of Ranch seasoning 
Now Lets Make the Crockpot Buffalo Chicken
  1. Place chicken breasts in bottom of crockpot
  2. Pour entire bottle of hot sauce on top of the chicken
  3. Sprinkle entire packet of ranch seasoning on top of hot sauce
  4. Set crockpot to cook on LOW for 8 hours
  5. After seven hours, open the lid of the crockpot and shred chicken right inside
  6. Close lid and cook for remaining hour
  7. Serve your Buffalo Shredded Chicken however you like! 

Here Are Some Serving Ideas...

1. Place chicken on whole wheat buns and top with shredded cheese - melt under the broiler or in the toaster oven!  This is what we did! 

2. Put your shredded chicken in a flour tortilla with lettuce and cheese to make a wrap
3. Place shredded buffalo chicken on top of a salad
4. Scoop chicken into lettuce cups

Cupid's Coconut Clouds



I love coming up with new cookie recipes!  And yesterday I wanted a lighter cookie recipe!  Something that wouldn't break those New Years Resolutions...you know those ones that we all made less than one month ago!  So I took my recipe for Coconut Cloud Cookies that I made every year for Christmas and made them lighter for Valentine's Day!

And these really do remind me of clouds!  They are light and airy!  Little pillows of deliciousness!

And did I mention that you only need three ingredients...well I guess 4 if you count the water! 

Here's What You Need to Make Cupid's Coconut Clouds:
  • 1 box angel food cake mix
  • 1 tsp almond extract
  • 1/2 cup water 
  • 2 cups sweetened coconut flakes

Now Let's Make Cupid's Coconut Clouds:
  1. Preheat your oven to 350 degrees and line baking sheets with parchment paper
  2. In the bowl of your stand mixer (fitted with the paddle attachment) beat together the angel food cake mix, almond extract, and water on low for 30 seconds
  3. Increase speed to medium and beat for 1 minute
  4. Fold in the coconut
  5. Use a cookie scoop to drop dough onto prepared cookie sheets
  6. Bake in oven for 12-13 minutes until lightly golden 
  7. Remove pans from oven and cool completely on sheets before storing in an airtight container
*TIP* I like to transfer the sheets of parchment paper to cooling racks to let the cookies cool completely rather than leaving them on the hot pans

Red Velvet Neiman Marcus Bars


I love red velvet anything!  I have shared my love of this delightfully scrumptious flavor on my blog from time to time!  Check out my past red velvet recipes...


And Now Red Velvet Neiman Marcus Bars!

Red Velvet is the perfect dessert for my two favorite holidays - Christmas and Valentine's Day!  That's why I thought today would be the perfect time to share these bars with you - Valentine's Day is 3 weeks away!  Inspired by original Neiman Marcus Bars (also know as Chess Squares or Gooey Butter Cake or sometimes Texas Gold Cake - I promise whatever they are called you have had them at some point)...I simply swapped out yellow cake mix for red velvet cake mix!  That makes these bars Cake Mix Recipe #25!!!

That's It!!!

Here's What You Need to Make the Red Velvet Neiman Marcus Bars:

  • 1 box red velvet cake mix
  • 3 eggs
  • 1 stick butter, melted
  • 1 block cream cheese, softened
  • 4 cups of powdered sugar (which equals 1 pound...which is one box...or a half of a 2 pound bag) 


Now Let's Make the Red Velvet Neiman Marcus Bars:
  1. Preheat your oven to 325 degrees and grease a 9x13 pan with butter or nonstick spray
  2. In a large bowl, combine cake mix, one egg, and melted butter until a soft dough forms
  3. Press dough into bottom of prepared pan
  4. In the stand of a mixer fitted with the whisk attachment beat together the cream cheese, remaining two eggs, and powdered sugar until combined and smooth
  5. Spread mixture on top of red velvet cookie dough - it will look like this
  6. Bake in preheated oven for 40 minutes until the edges are crisp and the top of the cream cheese mixture has a slight crust but doesn't seem completely set (the center will still wobble a bit) - The picture below is what you are looking for 
  7. Allow pan to cool on a wire rack for thirty minutes
  8. Transfer pan to fridge to cool completely (an additional two hours)
  9. Cut into bars and serve or store in the fridge until you are ready to eat

#hiloskyeveryday2014 Week 4

It's Thursday, so that means it's time for a new #hiloskyeveryday2014 post!  It's Week #4!

Day 17 - Blakely's First Pigtails!  This is a milestone for sweet little B, as she will endure years of Mama doing her hair before she is big enough to do it herself!  Lacie was sporting pigtails wayyyy earlier because she had a lot more hair!  


Day 18 - It's Saturday and in our house that means we enjoy Pancake Breakfast!  Whole wheat chocolate chip pancakes to be exact!  This is Lacie's plate!  My little girl eats a lot!  You can find the recipe for the pancakes here! 


Day 19 - Sunday morning cookie adventures!  Lacie was super excited to make these princess cookies with Daddy! 


Day 20 - We took a family walk to get a little fresh air before the snowstorm! 


Day 21 - Lacie was exhausted!  It took two people (me and Blakely) to wake her up from her nap!  


Day 22 - After 29 hours of plowing snow, Daddy finally came home from work just in time to read stories before nap! 


Day 23 - While this may not seem like anything special it really is...see I left the room for 5 whole minutes and I came back to this - two girls reading quietly!  I was definitely expecting the room to be destroyed!
