12 Days of Christmas Desserts - Day #1 - Red Velvet Neiman Marcus Bars

Last year, I gave you 12 Days of Christmas Cookies!  This year I'm bringing you 12 Days of Christmas Desserts!  Some will be cakes, some will be cookies, some will be old recipes while others will be new - but all will be delicious and festive!

I'm starting with my Red Velvet Neiman Marcus Bars!  This recipe was originally shared last year for Valentine's Day, but it is the PERFECT Christmas Dessert because it is red and just oh-so-pretty for the holidays!  It is also one of my most pinned desserts!

Did I mention it's a cake mix recipe?  Well it is!  And that makes it super easy!

Here's What You Need to Make the Red Velvet Neiman Marcus Bars:
  • 1 box red velvet cake mix
  • 3 eggs
  • 1 stick butter, melted
  • 1 block cream cheese, softened
  • 4 cups of powdered sugar (which equals 1 pound...which is one box...or a half of a 2 pound bag)

Now Let's Make the Red Velvet Neiman Marcus Bars:
  1. Preheat your oven to 325 degrees and grease a 9x13 pan with butter or nonstick spray
  2. In a large bowl, combine cake mix, one egg, and melted butter until a soft dough forms
  3. Press dough into bottom of prepared pan
  4. In the stand of a mixer fitted with the whisk attachment beat together the cream cheese, remaining two eggs, and powdered sugar until combined and smooth
  5. Spread mixture on top of red velvet cookie dough - it will look like this
  6. Bake in preheated oven for 40 minutes until the edges are crisp and the top of the cream cheese mixture has a slight crust but doesn't seem completely set (the center will still wobble a bit) - The picture below is what you are looking for
  7. Allow pan to cool on a wire rack for thirty minutes
  8. Transfer pan to fridge to cool completely (an additional two hours)
  9. Cut into bars and serve or store in the fridge until you are ready to eat - I like them really cold but you can take them out about 30-45 minutes before serving to take the chill off!

Chocolate Coconut Neiman Marcus Bars

One of the other desserts I served at Easter Brunch were these amazing Chocolate Coconut Neiman Marcus Bars!  I have blogged about my love of these bars before!  Traditional Neiman Marcus Bars have a yellow cake base with a plain cream cheese topping.  But I like to mix the flavors up by experimenting with different combinations.  And when I was trying to decide what to make for Easter, I knew I wanted coconut!  Then, I decided to use a chocolate base so that would be reminiscent of Coconut Cream Chocolate Easter Eggs...except BETTER!

Oh and these bars are CAKE MIX RECIPE #35

Your Shopping List:

  • 1 box chocolate cake mix
  • 1 stick butter, melted
  • 3 eggs, divided
  • 1 8oz block of cream cheese, softened to room temperature
  • 4 cups powdered sugar
  • 1/2 tsp coconut extract
  • 2 cups sweetened shredded coconut

Now Let's Make the Chocolate Coconut Neiman Marcus Bars:
  1. Preheat your oven to 325 degrees and grease a 9x13 baking dish
  2. In a mixing bowl, combine the cake mix, melted butter, and one beaten egg until a dough forms
  3. Press the chocolate dough into the prepared pan and set aside
  4. In the bowl of a stand mixer fitted with the whisk attachment, combine the softened cream cheese, two remaining eggs, and coconut extract until fully incorporated
  5. Beating on the lowest speed, slowly add the powdered sugar until it is completely mixed with the wet ingredients
  6. Fold in the shredded coconut
  7. Pour cream cheese mixture on top on the chocolate dough
  8. Bake for 40 - 50 minutes until the top has formed a crust, the edges are set and brown - the middle will appear to not be quite set, that's okay!
  9. Cool on a wire rack for 30 minutes before transferring pan to the fridge to cool and set completely - at least an additional 2 hours (I left it in the fridge overnight and cut the bars in the morning)
  10. Cut bars and serve or store in the fridge until you are ready to serve!

Red Velvet is the perfect dessert for my two favorite holidays - Christmas and Valentine's Day!  That's why I thought today would be the perfect time to share these bars with you - Valentine's Day is 3 weeks away!  Inspired by original Neiman Marcus Bars (also know as Chess Squares or Gooey Butter Cake or sometimes Texas Gold Cake - I promise whatever they are called you have had them at some point)...I simply swapped out yellow cake mix for red velvet cake mix!  That makes these bars Cake Mix Recipe #25!!!

Blakely's Butterscotch Neiman Marcus Bars

I love any type or bar - cookie bars, candy bars, etc.  I also love to use cake mix as a base for whipping up a quick dessert recipe!  Enter this delicious recipe for Butterscotch Neiman Marcus bars that I found at Mix and Match Mama's blog.

What are Neiman Marcus Bars?  They are a cookie bar with a cheesecake type layer...except the top layer never fully sets so it's creamier than cheesecake!!  They are gooey and delicious!  I have also heard them be referred to as Chess Squares, Gooey Butter Bars, and Texas Gold Bars.

I don't think that I have had a Neiman Marcus bar since college, but after coming across the recipe for them I haven't been able to stop thinking about making a batch!  These bars are super easy to make!  You start by making a dough with boxed cake mix, butter and eggs - just like in my funfetti cookie bars!  But then you add a delicious cream cheese topping which makes these bars gooey and wonderful!  Add in butterscotch flavor, and well, they are just fantastic!

Here's What You Need to Make Blakely's Butterscotch Neiman Marcus Bars:

  • 1 box yellow cake mix
  • 1 stick butter, melted
  • 4 eggs
  • 1 box powdered sugar
  • 1 block cream cheese, room temperature
  • 1 bag of butterscotch chips
Now Let's Make the Bars:
  1. Preheat your oven to 350 degrees and grease (I used Pam) a 9x13 pan
  2. Mix together your cake mix, butter, and 2 of the eggs (this is your first layer)
  3. Press this mixture evenly into the greased pan
  4. In a stand mixer combine cream cheese, powdered sugar, and 2 remaining eggs (you can also use a hand mixer - I just LOVE my kitchen aid stand mixer - it's PINK)
  5. Now put 1 cup of your butterscotch chips in a microwave safe bowl and melt in the microwave (I did mine on 50% power for 1 minute) and beat the melted butterscotch into the cream cheese mixture
  6. Fold in the rest of the butterscotch chips and pour this mixture on top of the crust
  7. Bake in oven for 35 to 40 minutes - the edges should be brown while the center is still wobbly
  8. Cool on your counter for 30 minutes then place in the fridge for at least two hours

They are amazing!  I had to give away half so I didn't eat them all by myself!
