It's January. And in New Jersey that means lots of cold weather! So this month I plan to make lots and lots of soup!
I started the year with a slow cooker full of Chicken and Rice goodness!
Your Shopping List for the Crockpot Chicken and Rice Soup:
- 1 pound chicken breast
- 6 cups low sodium chicken stock
- 1 heaping cup diced carrots
- 1 heaping cup diced celery
- 1 cup diced onion
- 3 cloves of garlic, minced
- 1 cup rice (I used a wild rice blend)
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1 bay leaf
- 1 pinch (about 1/4 tsp each) dried rosemary, thyme, and sage*
Now Let's Make the Crockpot Chicken and Rice Soup:
- Add all ingredients to your crockpot
- Cook on low for 4 hours
- Remove chicken and shred with two forks
- Return to crockpot and cook for additional 30 minutes on low
- Serve with crackers or bread
*for this soup, I used dry herbs...if I was making this in the spring or summer I would have used fresh herbs and increased the quantities
