Loaded Cranberry Cookies
Only two more Christmas Cookies to go! Today, I am sharing a super easy and scrumptious drop cookie - My Loaded Cranberry Cookies! They get their name because, well, they are loaded with lots of deliciousness - oatmeal, cranberries, white chocolate chips, and semi-sweet chocolate chips! Even though this recipe is from scratch, it is still easy and fast! You can add these to your Christmas Cookie tray today!
Here's What You Need to Make the Loaded Cranberry Cookies:
- 1 stick (1/2 cup) butter, softened
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup dried cranberries
- 1/2 cup white chocolate chips
- 1/2 cup semi-sweet chocolate chips
Now Let's Make the Loaded Cranberry Cookies:
- Preheat your oven to 375 degrees and line cookie sheets with parchment paper
- In a stand mixer, fitted with the paddle attachment, cream the butter and brown sugar
- Add the egg and vanilla extract, beating well
- In a mixing bowl, whisk together the oats, flour, baking soda, and salt
- Add dry mixture to the wet mixer and beat on lowest speed until combined
- Stir in the cranberries, white chocolate chips, and semi-sweet chocolate chips
- Drop onto prepared cookie sheets using a cookie scoop or rounded tablespoon
- Bake for approximately 10 minutes, watching closely, until a nice light golden brown
- Cool on cookie sheets for one minute before transferring to wire racks to cool completely
- Store in an airtight container
