Berry Baked Oatmeal


I'm always looking for new, fun breakfast recipes because - if I'm being honest - my girls will sometimes eat breakfast for lunch and dinner too!  Breakfast foods are so easy when you have little kids - especially kids who go to bed before John and I are ready to eat dinner!  Last week, we had a playdate and I decided to put together a little Baked Oatmeal featuring some delicious Jersey Blueberries and Raspberries!



It turned out DELICIOUS! 

And I definitely plan to make a few flavor variations of this soon!  I'm thinking bananas and chocolate...coconut for a summery flavor!  Lots of ideas! 


Your Shopping List for the Berry Baked Oatmeal:
  • 2 cups rolled oats
  • 1/3 cup raw sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup blueberries
  • 1 cup raspberries
  • 2 cups milk
  • 1 egg
  • 1 tbsp coconut oil, melted and cooled
  • 2 tsp vanilla

Now Let's Make the Berry Baked Oatmeal:
  1. Preheat your oven to 375 degrees and grease a 10x8 baking dish (you could use a 9inch square or a 9x13 - you would just have thicker or thinner baked oatmeal)
  2. In a mixing bowl, stir the oats, sugar, baking powder, cinnamon, and salt
  3. Add half of the berried and spread the dry mixture into the prepared baking dish
  4. Top with remaining blueberries and raspberries - set aside
  5. In a large mixing bowl, whisk together the milk, egg, coconut oil, and vanilla
  6. Pour wet mixture evenly over dry mixture and berries - lightly shake your casserole dish to ensure that the milk mixture has been evenly distributed
  7. Bake in preheated oven for 35 - 40 minutes until casserole is set
  8. Remove from oven and cool for at least 5 minutes before serving

Mommy Mondays: My Tiny Dancer

Saturday and Sunday, Lacie Jane danced in her very first dance recital!  She completed her first year of dance along with about 15 other little girls all aged 2.5 - 3.5!  I felt so many emotions and definitely had tears in my eyes as John and I watched our little ballerina skip across the stage!  She went up on that stage and was so brave and determined to do her dance without missing a step!  Since Lacie is finished with her very first year of dance, I thought it would be the perfect time to do a Mommy Monday look back at my Tiny Dancer!

Friday Favorites

It's FRIDAY!!!!  And that means it's time for another round of Friday Favorites!



 As I parent, I couldn't resit this picture I saw while browsing Pinterest!  Isn't that the truth!




1.  Puddle Jumpers

I know, I know!  I'm really late to the game with these.  I have seen kids wearing puddle jumpers at our pool every single summer.  But here's the thing.  My kids are little skinny minis - they say that these are for children weighing 30 pounds.  Well Lacie finally reached the 30 pound mark!  And Blakely is about 27.  So I figured that I could go ahead and buy them for the summer!  They did not disappoint!  My girls are swimming all over the pool with these things!  




2. John's Father's Day Shirt 

In trying to find John a great gift for Father's Day, I really wanted something that would have all three girls names on it.  John is not a jewelry person so that was out.  And it's hard to find something that will accommodate three names - most ideas I found only allowed for two names.  When we just had Lacie and Blakely I designed custom shoes that had each girls name on the back.  I really wanted something that John would wear all the time, so what better than a t-shirt!  You can find John wearing t-shirts and shorts all year round - even during New Jersey winters!  So this was perfect.  And obviously I had to throw a little pink in there!  Here's the back of the shirt:

3.  Baby Food
It's that time!  Paisley is six months old and she finally seems ready to eat solid foods consistently - twice a day!  She is loving Puffs, and teething crackers, and thicker pureed food!  I always buy some jars or pouches, but for the most part I really enjoy making my own Baby Food!  I plan to do an entire post all about baby food, but for now I am so excited to make my favorite Roasted Blueberry and Banana Puree - with local blueberries of course! 




4. Fourth Of July
Summer is in full swing, and it's hard to believe that next weekend we will already be celebrating The Fourth of July!  I love love love looking at little kids clothes for all of the Holidays, and July 4th is no different!  I adore all of the red, white, and blue designs and they are perfect for wearing all summer long!  I already have outfits for the girls that they wore back on Memorial Day and will be wearing again!  Here are some other outfits that I thought were really sweet:


5. Island Coconut K-Cups
Hands down, the Island Coconut k-cups are my favorite in the summer!  They're a seasonal flavor so they aren't always available!  I am obsessed with them and I look forward to their spring release date every single year!  If you like coconut go find this flavor!

Day 155 - I just love how much Lacie loves dancing!

Day 156 - a much needed haircut for Lacie and Blakely's first haircut ever!  B wasn't a fan and had to be bribed with a lollipop...and then she still wouldn't sit in the chair.

Day 157 - Happy Birthday Grandpop! 

Day 158 - We finally like tummy time!

Day 160 - I think I spot a future coffee addict!  Like mother, like daughter!

Day 161 - this is where we will be all summer!

Day 165 - we added bubbles to the slip and slide.  It was obviously a big hit!

Day 166 - first Blueberry picking day of the season!

Day 167 - sometimes Mama needs an iced latte in the afternoon!

Day 171 - We had to give Daddy his Father's Day gift one day early!  I just love this shirt that I designed him!  He is the best #girldad

Day 172 - We went out for ice cream and in typical third child fashion Paisley got to taste her first bite of it at only six months old! 

Day 173 - If Paisley drops her Paci someone is always there to help her get it back in!

Day 174 - Poor Lacie had allergy testing.  That's a positive reaction for peanuts.  She was so brave through the entire thing!
